Orders, customers, payments and refunds go to Xero on their own, with the tax your store charged. When an invoice is paid in Xero, the order is marked paid in your store.
Each order becomes an invoice with its lines, discounts, shipping, fees, tax and the customer as a contact. Send them approved, or as drafts you approve in Xero.
Payments are recorded against the invoice in the account you choose for Stripe, Square, PayPal and the rest. Redeemed gift cards come from your gift card liability account.
Xero tax rates on each line for VAT and GST, or the tax as its own line for US sales tax. Rounding pennies go to the account you pick.
Refunds become credit notes. Canceled and deleted orders void their invoice. When an invoice is paid in Xero, the order is marked paid.
Sending never holds up checkout, retries when Xero is busy, and holds an order with the reason when a setting needs you.
Activity shows what was sent, what came back from Xero and what needs you, on the order screen and in the orders list too.

Yes. The tax is the figure the order charged. With Xero tax rates each line carries its VAT or GST rate. For US sales tax, which changes by address, send it as its own line to a liability account.
A refund becomes a credit note, set against the invoice or paid back from the account the money came from. A canceled or deleted order voids its invoice in Xero.
